I love the American version of the British expression "I couldn't care less". As a sentence there's nothing wrong with it, it's how it's used that doesn't make sense. Saying "I could care less what you think" means that you do care what that person thinks, but it's used to express that you don't care what that person thinks.
Saying "I couldn't care less what you think" means that you don't care what that person thinks, there's no way you could possibly care less, therefore you don't care at all.
